For the filling
▢ 8 oz cream cheese
▢ 1 ½ cups butter
▢ 2 ⅔ cups flour
▢ 1 egg yolk
▢ 4 eggs
▢ 2 ¼ cups brown sugar
▢ 4 tbsp butter, melted
▢ 4 tsp vanilla extract
▢ 2 ¾ cups pecans, chopped

For the pastry
Place the cream cheese in a mixer. Slice the butter into thin slices and add to the mixer. Cream the cream cheese and butter at high speed until smooth. Add the egg yolk and mix together. Add the flour slowly. Beat until combined into a pastry dough. The dough will be sticky.

Thanksgiving Eve Supper. Festive and Fast: Oyster Stew
1/4 C flour
1/4 C water
4 t salt
4 t Worcestershire
2 8 oz containers shucked oysters
8 C 1/2 & 1/2
3 T butter
2 T chopped parsley

Combine flour, water, salt and Worcester in 4 qt saucepan; add oysters & their liquid. Cook over med heat 10-15 mins until edges curl and centers are firm. Stir constantly. Add 1/2 & 1/2 & butter, heat to boiling while stirring. Remove from heat, let stand 10 mins. Garnish with parsley.

Cheesecloth
1 sweet onion
1 bunch cilantro
2 bunches green onions
Fresh mushrooms for shaving on soup
Garlic
2 jalapeno peppers
2 habanero
High quality chicken bouillon (Minors, Better Than Boullion etc)
2 medium chicken breasts cut into bite-sized pieces or 1 lb. shrimp (I don't even put meat) **OPTIONAL**
2 LG cans sliced mushrooms or 4 sm. cans (drained & squeezed of juice)

Russian tea cakes are suuuper easy to make.
But first! The ingredients:

1/2 C powdered sugar
2 1/4 C all-purpose flour
1/4 tsp salt
1 C unsalted butter @ room temp.
1 tsp vanilla extract
3/4 C finely grated pecans measured after grating
2 C powdered sugar for rolling baked cookies


CHEESECAKE

Crust:
1 1/2 cups graham cracker crumbs
1/4 tsp ground cinnamon
1/3 cup melted butter

Filling:
4 8 ounce packages of cream cheese, softened
1 1/4 cups sugar
1/2 cup sour cream
2 tsp vanilla extract
5 large eggs

Preheat oven 475 degrees. Place a large pan with 1/2 inch of water in oven. Line the bottom of a 9 inch springform pan with parchment paper.

Pumpkin Bars
4 eggs
1 cup vegetable oil
1 2/3 cups sugar
15 ounces pumpkin
2 cups sifted all-purpose flour
2 tsp ground cinnamon
2 tsp baking powder
1 tsp salt
1 tsp baking soda

Icing
8 ounces cream cheese
1/2 cup butter
1 tsp vanilla extract
2 cups sifted confectioner sugar


Tonight’s dinner was butter parmesan spaghetti squash and roasted cherry tomatoes.

Preheat oven to 350 degrees. Cut spaghetti squash in half, scoop out seeds, and place on cookie sheet. Roast in oven for 30 minutes. When the timer goes off add a handful of cherry tomatoes to cookie sheet and roast for 10 more minutes. Shred squash, add 1-2 tbsp of butter (depending on size of squash) and mix. Sprinkle with Italian seasoning, parsley, and parmesan cheese.
