I stayed in the bed till 8:30 this morning. Figured I might as well.
We're going to have plenty of long summer Saturdays before we know it. Might as well rest on a rainy Saturday today.

But it's about to come to an end.
Kitchen duties are calling my name. I won't be able to put them off much longer.

I cheat and make an Enchilada Casserole, I still make my sauce.

Mine use the red sauce and corn tortillas. I don't roll them, I build it like Lasagna.

I pre-bake the chicken, seasoned for Mexican food.

Sits in the fridge overnight Then I assemble the layers"
- enchilada sauce
- corn tortillas
- shredded chicken
- cheese
Repeat like lasagna.
Bake 350° for two or so hours.
Serve with Guacamole and chips. Yummy!

Also freezes really well after in the fridge overnight, cut and place in whatever you like to freeze in.
