
Tonight I whipped up a summer dessert on the fly. Like to share it with you!
It is non-GMO if you follow the brand list. If that's not important to you, no worries. Use whatever brand you like, in that case.
NO-BAKE MARGARITA-LIME CHEESECAKE BARS (non-GMO)
Ingredients:
PRETZEL CRUST ‐
1 bag Unique pretzels
1 box of Wal-Mart brand vanilla wafers
1/2 cup powdered sugar
1 and 1/4 cup unsalted butter
Pour about half the pretzels and a third of the vanilla wafers into a food processor.
Process until fine; small chips are okay. Stop the blade, cube the butter and add it and the sugar to the bowl and process again until both are incorporated. The crust should hold together when pinched. Taste for sweetness; add powdered sugar by heaping tablespoon if you need to correct it.
FILLING:
4 8-oz packages of Philly cream cheese, softened to room temperature
1 10-oz can of frozen Margarita mixer (noon- alcoholic), partly thawed
1 14-oz of organic sweetened condensed milk
Juice of two medium limes--(zest them first before you juice them; the zest goes on top of the dessert.)
In a large bowl (use a stand mixer if you have one) soften the cream cheese. Add the condensed milk and mix on low until it won't splash back at you. Add the margarita mix and continue to mix on low. Pour in the fresh lime juice and then begin to increase the mixing speed gradually until the highest speed is reached. Beat until fluffy, frequently scraping sides/ bottom of the bowl.
ASSEMBLY:
Pour crumb mixture out into a large rectangle glass Pyrex dish. Using your fingers, loosely push the crumbs into all corners and evenly distribute it across the dish. Press with palms until firm. Crust should be thick!
Pour the cream cheese over the crust, mounding high in the middle. Use your spatula to push down the cream cheese in the middle and work it to the corners. Smooth it out evenly across the top. Clean any smears by wiping them away with slightly damp paper towel.
Sprinkle the lime zest across the surface evenly. Cover dish with foil or the lid, and refrigerate at least four hours.
You can add tequila and/or triple sec to this, to taste, if you like the flavor of alcohol!
Slice into small squares to serve. Top with a small puff of extra creamy whipped cream, if you want to be extra fancy.
Don't forget to charge your family for the rights to lick the mixing bowl and the spatula clean!
This should make about 24 pieces, depending on how you cut it.

It’s been a 3 day struggle. The flange is a cheap one and the new wax rings only get 1 bolt. Used to be two: one to bolt down to the flange, and then after the toilet was placed, a washer first and then a second bolt. This toilet is thinner on the bottom and the bolt was too high. Went back for a different ring (one wax ring blown!) and same issue. It had snap bolts, but I wasn’t strong enough to snap ‘em!
Toilet was rocking, too, over the grout spacing. Went back to Lowe’s 4x!
@MMA Future reference - don't use wax rings - use the new rubber gaskets. They work great.
